Interesting coffee comes out of Sumatra, partly due to its unique processing technique, ‘Giling Basah’; cherries are picked, sorted, wet-pulped, dried to 30% moisture, then the twist - while still wet, the bean’s outer parchment is removed in a huller & the beans are then patio-dried to 12%. This unusual yet very traditional step of removing parchment while beans are wet contributes to the classic deep blue-green colour of the bean & gives its distinct taste.
